This is a from-scratch version of the famous broccoli rice casserole that is usually made with canned mushrooms and cream of chicken soup. It was very good. I followed the recipe pretty much as is except I didn’t use any flour, but instead used a little extra cream cheese to thicken the cheese sauce. I didn’t use Velveeta or Cheese Whiz, but found a cheese spread at Walmart called President Pub cheese that worked very well! I subbed the rice with cauliflower rice that I sautéed in some butter and some of the chicken broth that was left from the boiled chicken. I like cauliflower rice less crunchy so I cooked it for several minutes. I added chopped jalapeños to give it a little kick. I also used heavy cream thinned with a little water instead of milk. To make it a complete meal I boiled chicken breasts in garlic and onion powder, shredded them, and added the chicken to the casserole. On top of the casserole, I sprinkled shredded cheddar cheese and pork panko. This is a famous casserole that I always make for Thanksgiving, but it’s great any time!
