Craving Crab Rangoon, well, here you go! Very good. It's not as crispy as I'd like, but wow, these are good.

Filling
4tbs butter melted in med saucepan
Add optional 1/4 finely diced green onion
Add 4 oz of crab meat
Cook until hot
Add 8 oz of cream cheese and stir until combined.
Wrapper
16 slices of mozzarella on a parchment-lined baking sheet cook at 375 in the oven until bubbled and slightly browned.
Remove from oven
Add 2 tbsp of filling to half of the slices.
Place other slices on top and bake for about 8 minutes until brown and crispy.
I think these could have gone a little longer than 8 minutes, but this was my first try.
