Decided to make lasagna, but couldn’t decide what to use for the noodle layers! I was going to make three or four different kinds and then thought what if I just combined everything to make one large super duper pan of lasagna! So each of the noodle layers is different. See below instructions on how it was made!
LASAGNA ON STEROIDS
You can use whatever lasagna recipe you like and just add the different layers but this is what I did.
Roasted one spaghetti squash and added two sliced zucchini to the baking sheet also. Used olive oil and seasoning salt and pepper on both. Baked at 400 degrees for 45 minutes.
In a large pan sauté one large onion chopped in a half stick of butter until translucent. Make a clear space in the center of the pan and add chopped garlic to taste. I like a lot! Sauté the garlic for a minute or two.
Add two packages of Italian sausage and brown that.
Then add pre-made sugar-free marinara or make your own. I did both because I had an open jar of Rao’s in the fridge and added a can of tomato sauce.
I then added Italian seasoning and red pepper flakes, salt and pepper.
I then mixed 1-1/2 medium cartons of ricotta with two eggs, basil, and Parmesan cheese.
So now you throw in everything but the kitchen sink! Ha!
Put meat sauce on the bottom of the pan, then I thought the zucchini would be the most sturdy, so that was next, then a layer of ricotta mixture, then shredded mozzarella, then the next layer of more meat sauce, then more ricotta then a layer of chicken deli meat! I heard it makes a good low-carb sub for noodles, then mozzarella, then a layer of pepperoni, then more meat sauce, ricotta, mozzarella, then a spaghetti squash layer, more meat sauce, and finally mozzarella and Basil sprinkled on top! Not sure that’s the exact order, but it’s close. You can make it any way you like!
