What great cheesy cornbread. Some chopped jalapeños in it would be good also!
Wanted to share something that is an awesome recipe for those like me who love
cornbread. This is completely Keto friendly:
Ingredients:
1.25 cups of almond flour
3/4 cup of shredded cheddar cheese
4 tablespoons butter, melted
1 teaspoon baking powder
1/3 teaspoon salt
3 eggs or egg whites
Preparation:
Preheat oven to 400 degrees, if using a cast iron skillet, place the seasoned skillet in the oven while it preheats.
Combine the dry ingredients in a large bowl
Add wet ingredients to the bowl and whisk until combined. It is ok if there are lumps.
Add batter to skillet (or muffin pan), and bake for 15 to 20 minutes or until brown. (1 like mine crispy on the edges and bake for at least 20 minutes.
Stores in fridge for a week or wrap individually and freeze for later.
