When a friend started on Keto (long before I joined Virta) I started trying some recipes knowing that lower carbs would help control my diabetes. This recipe was my first real baking success. It has been wonderful every time I have made it.
I generally don't have the confectioner's Swerve. I usually have granulated erythritol in my pantry. So I make a simple glaze with that and lemon juice. I pierce the top with a fork all over and pour the liquid glaze over the loaf to make it more moist and sweet.
*Be aware that this is high in total carbs for the Virta program - but it is still better than a standard lemon pound cake.
I have adapted this recipe for Chocolate Loaf. I leave out the lemon ingredients. To the dry ingredients, I add 2-3 tablespoons of cocoa (preferably DARK cocoa.) I also add approximately the same amount of sweetener to adjust for the cocoa’s lack of sweetness.
