If you’re on a keto diet, do you miss hummus, that delicious Middle Eastern, usually made from chickpeas, is dip that everyone thinks of as being very “healthy?” It probably does have several healthy components, but at an average of 40-48 carbs per cup it’s not healthy for us if it spikes our blood sugar! I think it’s definitely advisable to try an even healthier, more low carb version that can still be very tasty. That’s where the keto dieters new friend, cottage cheese comes in! I made this great Keto Cottage Cheese Hummus and it made me very happy because it tasted very much like the traditional chickpea hummus! I also served it with mini sweet peppers and cucumber slices which were perfect!
Here’s how to make this very tasty Keto Cottage Cheese Hummus!
First I knew I wanted a great loaded topping to this hummus so I toasted some pine nuts in a dry pan for just a few minutes to bring out the oils and flavor.
Then I chopped the sun dried tomatoes, red onion, and cilantro and had them ready with the feta cheese.
Put all the main ingredients in the small Nutribullet blender.
Mix well until everything looks blended and smooth and creamy!
Doesn’t that look so good? Then just top with a drizzle of olive oil, sun dried tomatoes, red chili flakes, cilantro, feta cheese, and toasted pine nuts. You can serve it with low carb pita bread or crackers, but I just used mini sweet peppers and ducumber slices and this hummus tasted so delicious!
