Cucumbers are one of my favorite veggies and I recently discovered Logan “The Cucumber Guy” on Tik Tok and immediately was intrigued because he’s gotten millions of views on these cucumber salad recipes he’s created. I must say they do look really good and better yet most are keto or can be easily adapted to keto.
Here are a few of his popular variations that I tried and put these cucumber salads to the Virtaworks taste test! We’ll just see if all this cucumber fuss is for real or not. I like that he uses very good clean ingredients, except maybe the MSG, which is debatable and also optional. I’ve included the ingredients and nutritional information as best as I could because Logan doesn’t really give quantities, but hopefully the Tik Tok videos I’ve attached to this post will show you how each salad is made and you can replicate it as best as you can!
Logan slices an entire English cucumber (that sounds like a lot, but it’s really not all that much) so the recipes are based on that, but I did half. And there were varying amounts, but a whole English cucumber is only about 7 carbs.
I think you technically could save some for the next day if you don’t shake and mix them, but I think it’s better just to make it fresh. It also can get watery if you have it the next day and that’s not good. As you can see from the videos, these salads can be made super fast so I would make and eat them the same day. I would chill it for about 30 minutes so it’s nice and cold, but this isn’t necessary.
I’ve been on such a cucumber salad binge with all this recipe making and taste testing, all I’ve been thinking about for days are cucumbers! If I eat any more, I might just sprout vines. But hey, at least it's a refreshing healthy obsession—better than cupcakes, right?
The first salad I tried was
California Roll Cucumber Salad
California Roll Cucumber Salad is a yummy take on the classic sushi roll, combining cucumber with the flavors of a California roll in a great simple, low-carb salad. This easy-to-make dish includes ingredients like cucumber, imitation crab (use real crab or boiled shrimp, because imitation crab contains sugar and other non-keto ingredients) avocado, mayo (avoid Kewpie mayo because of the sugar) whipped cream cheese, soy sauce, sesame seeds, and MSG.
I am posting two different versions of this recipe so you will see the difference that substituting the imitation crab for fresh crab and the kewpie mayo for regular mayo makes! They must put a lot of sugar in that imitation crab!
To prepare, thinly slice the cucumber and mix it with diced crab, avocado, and other ingredients in a jar or container, then shake until everything is well combined. You o also add optional toppings like sesame seeds, pickled ginger, or wasabi for extra flavor. You can also eat it with Nori Seaweed Chips which is very good too!

Here’s a revised version of Logan’s Cucumber California Roll Salad recipe, replacing the imitation crab with canned or fresh crab and using regular mayo instead of Kewpie mayo.
Ingredients:
1 large English cucumber, thinly sliced
4 oz canned or fresh crab meat
½ avocado, diced
2 tbsp regular mayonnaise
2 tbsp whipped cream cheese
1.5 tbsp soy sauce (use low-sodium for less salt)
2 tsp toasted sesame seeds
Instructions:
Thinly slice the cucumber using a mandolin or sharp knife for even slices.
In a large bowl or jar, combine the sliced cucumber, fresh crab meat, diced avocado, regular mayo, whipped cream cheese, and soy sauce.
Gently toss or shake the ingredients until well mixed.
Garnish with toasted sesame seeds before serving.

LA LA Land Cucumber Salad
LA LA Land Cucumber Salad, has gained a lot of attention on Tik Tok , especially after being featured at the La La Land Kind Cafe. This salad combines refreshing cucumbers with unique toppings to elevate its flavor profile. Key ingredients include:
Cucumber: Sliced thinly, as the base.
Red Onion: Adds a crunchy bite.
Avocado: Creaminess
Smoked Salmon: For a rich, savory element.

To make this salad, you’ll need cucumber, Greek yogurt, red onion, ranch seasoning, lemon juice, garlic, and fresh dill. Ingredients:
1 cucumber, thinly sliced

This was very good. You might start out with half the hot sauce so you can adjust the heat level if necessary. The blue cheese is super yummy in this!

1 whole Rnglish cucumber, sliced
1 tablespoon natural sugarftee peanut butter

My Spicy Peanut Butter and Garlic version!
Taste Test Results:
Logan used regular peanut butter so I substituted it with natural sugarfree and mine was kind of clumpy so I warmed it a bit, you don’t want it piping hot, with the soy sauce and sesame oil to make it a smoother consistency and easier to mix with the cucumber. I also thought that the peanut butter Logan used had sugar so I tried the salad with and without a few drops of stevia and I liked it better with the stevia. It brought out the great Asian flavors.
You can also sub the peanut butter with any other Sugarfree nut butter if you prefer.
Jalapeño Popper Cucumber Salad
This is a keto-friendly salad with low carbs, fresh flavor, and a spicy kick!
Ingredients:
1 English cucumber, sliced
1 jalapeño, seeded and diced (adjust heat to taste)
4 Tablespoons whipped cream cheese, softened
2 Tablespoons Ranch dressing
1 cup shredded cheddar cheese
4 strips of bacon, cooked and crumbled
2 tbsp green onions, sliced or red onion
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
Instructions:
In a large bowl, combine softened cream cheese and sour cream until smooth.
Stir in the garlic powder, onion powder, and salt and pepper.

This was super yummy! The perfect jalapeño popper salad. I added the garlic and onion powder, but that’s the great thing about these salads is you can make them your own!
Well that’s it for my cucumber salad expedition! These salads are and were delicious and also very important they fit perfectly into our keto diet! These recipes are approximate amounts because Logan doesn’t really give quantities, so you can season the salads how you would like them. The carb counts can vary depending on what ingredients and how much you use so just put everything into a carb app to verify what you are eating.

It is much easier to use a mandolin to slice the cucumbers so all the slices are the same size, but it’s certainly not necessary. But here is a mandolin that is similar to the one I use and it also does great with so many things!

I like this Ranch Seasoning from McCormick because it has 5 simple ingredients and none of the questionable ingredients found in other Ranch Seasonings. I have bought it at Walmart and on Amazon. I like to use it to make dressings, dips, and lots of other things!
This is my favorite mayo. I like that it has good oil and good clean ingredients!
