Everything You Want to Know about Low Carb/Keto Tortillas🌮

Of all the foods I miss most since I have been on a ketogenic diet, tortillas must be close to or at the top of the list. I’m a Texas girl; we eat, breathe, and sleep Mexican food! So, since going keto almost seven years ago, I have been hunting for a great keto/low-carb tortilla. The good news is they ARE out there, and the bad news is that even though they are lower in carbs than a carby tortilla, most have varying degrees of wheat and other non-desirable ingredients for #diabetics. For people eating low carb, that can be significant. I even use some of them for myself on keto, but I view them more as an occasional treat than something I would have more often. I probably have a bought tortilla once every 2-3 months, if not more. I keep them in the freezer and seldom buy them because my blood sugar doesn’t always act kindly to them. But everyone is different, and you might be able to have manufactured tortillas more often! But I think I have hope! Read on below to see.



The two store-bought tortillas that I like best are Mr. Tortilla and Mama Lupe’s. Mama Lupe’s contains some wheat and has ten carbs per tortilla, but it is approved in the Virta Resource Center if your blood sugar responds OK. The Mr. Tortilla tortillas are much smaller, are three carbs, and contain some wheat. I have used both for tacos, enchiladas, quesadillas, sandwich wraps, etc. I love both of them; I can’t have them very often, but they do spike my blood sugar. I would have Mexican meals made from them every day if I could.


In my never-ending search for the best keto tortilla, I found that if I want one with acceptable approved keto ingredients, I must make them myself! (This ticks me off too!) I want to buy good keto tortillas. One that is already made for me that isn’t going to spike my blood sugar! Is that too much to ask? I don’t think so! And yes, I know about Egg Life wraps! They are NOT tortillas! They are an egg! Ha! They are spongy and great for some things. I’ve done all sorts of things with them, but they aren’t my ultimate keto tortillas!

This recipe by Keto Connect was the only tortilla I had for years. Keto Connect provides a perfect description of many of the other keto tortillas that are available. They give all kinds of good information on most of the manufactured tortillas, so check that out and see all the low-carb tortillas you can buy.




But they don’t list Mam Lupe’s or Mr. Tortilla, so here is the info on both of these great low-carb tortillas. The difference in carbs with the Fox Hill Kitchens tortillas is very different. 4.2 carbs for Fox Hill Kitchens and 10 carbs for Mama Lupe’s! That’s what wheat will do. There is no wheat whatsoever in the Fox Hill Kitchens tortillas! It’s just outstanding how good they are and how low-carb they are!




I have found Target to have the best price!






The Mr. Tortilla tortillas are very good. I love the Pico de Gallo flavor, but several other flavors exist. They are smaller street-size tacos at 3 carbs each but contain wheat and other ingredients that can spike blood sugar!











Another keto person I like is Steve with Serious Keto. This is his video making a 90-second tortilla that I like A LOT. It’s very easily made in the microwave. See what you think.



This is the next video Steve made, in which he tries different variations of the original video. I have not tried any of the variations because I think the original recipe is amazing!



This is my take on Steve’s 90-second tortilla, and I was VERY impressed!





My other tortilla hope is using the great Fox Hill Kitchens Bread Mix tortilla recipe. These tortillas just blew me AWAY! Compared to the carbs in the Serious Keto tortilla (6 total carbs) the Fox Hill Kitchens tortilla is lower at 4.25 carbs, so a significant difference. Taste-wise, I think I would have to have them side by side, but they are close. I kept the Fox Hill Kitchens tortilla batter in the fridge for a few days and it did great, so it would be very easy to have a fresh, hot tortilla without mixing any more batter. That is always nice!


Here are my Fox Hill Kitchens tortillas. I also discovered that if I take the tortilla out of the microwave and let it cool for a couple of minutes, then put it in a medium-hot skillet for about 60 seconds, you get those nice tortilla char marks! This also changes the tortilla texture and makes it much more sturdy. I used the tortillas to make an enchilada, quesadilla, and wrap for a low-carb gyro! Oh my heavens, they all were so good!





Batter mixed and all bubbly. Let it rest for 5 minutes. It gets thicker.




Spread as thinly as possible. Ready to go in the microwave for 2 minutes.



Fresh out of the microwave and looking like corn tortillas! Hooray!



After frying in a dry skillet for about 60 seconds on each side



Don’t they look perfect?


I just tested the enchilada and quesadilla with a very simple and fast method to see how they would hold up and taste. The tortillas passed the test with flying colors!







They work great for pinwheels and sandwich wraps! I’m thinking a breakfast taco would be SO good!




Here is the recipe for the low-carb gyros. The Fox Hill tortillas are an excellent replacement for pita bread! They are the tortillas that keep on giving! Ha!
