We must have black-eyed peas every New Year’s Day for good luck!
I started several years ago making a soup with the leftover Christmas ham and boiling it for the broth, but you don’t have to use ham. Any sausage or even ground beef will work. And yes, I know black-eyed peas are NOT keto, but when your entire year of good luck depends on it, just a few is OK, I think!
I take out a bowl before adding all the peas to the soup and sprinkle a few black-eyed peas on top of my soup. I also like to garnish with cheddar cheese.
I buy canned peas. I like Trappey’s jalapeno black-eyed peas the best! I also add two cans of Rotel tomatoes.
I serve the soup with jalapeño cheese cornbread by Good Dees, which is so good! I add chopped jalapeños and cheddar cheese to the mix. It's super yummy that way!
