This mashed cauliflower is life-changing, and it’s so good. It’s the perfect way for those on a keto diet to have something that is very much like mashed potatoes and I think even better! You can serve it with so many recipes for the perfect veggie side dish.
Cauliflower Mash a la George
1 head cauliflower
4 ounces cream cheese
4 Tablespoons butter
4 ounces Havarti Cheese or 5 thick slices
Salt and Pepper to taste
I like to use a Seasoning Salt that has garlic powder, onion powder, and other seasonings
Optional added pepper
Wash and clean 1 head of cauliflower.
Cut off the green part, but leave stems.
Cut in large chunks.
Boil to just tender, but don't overboil.
Drain and pat very dry and put in a food processor.
You might need to do two batches, just cut the ingredients in half for each batch.
Add all the ingredients and process until it looks creamy like mashed potatoes, but don't over-process because this can thin it.
All ingredients are to taste so you can add more or less.
Could add some herbs, garlic, or bacon. Whatever you like.
