I have never made this, and I tried to find an interesting keto version. There wasn’t too much out there, but here’s one that could work! The one that looked good to me was a roasted tomato version. Not sure if a non-traditional version would work, but including that one too! It does call for matzo meal, so I’m thinking sub almond flour for that, but I like that there is ricotta in the balls. I think that would make them lighter and more fluffy. Also, the matzo meal doesn’t have that many carbs so maybe do half and half With the almond flour would be good also. So I hope one of these two will work for a delicious Passover meal.
