This recipe makes 12 Meatloaf Muffins

1 pound ground beef
1/2 cup finely chopped onion
1 egg
1/2 cup pork rind crumbs
1/2 tbsp @flavorgod Garlic Lovers seasoning (you can also use 1/2 tsp garlic powder)
*1/2 tbsp @flavorgod Italian Zest seasoning (any Italian seasoning will work)
* salt and pepper, to taste
* 2 tbsp low-sugar ketchup
* 3 tbsp sugar-free BBQ Sauce
INSTRUCTIONS:
Preheat oven to 350 degrees
In a bowl combine ground beef, chopped onion, egg, pork rind crumbs, garlic seasoning, Italian seasoning, salt, and pepper, and mix the ingredients together until well combined.
Gently roll about 1/4 cup of mixture into a thick patty and place it into the muffin pan.
Combine the low-sugar ketchup and sugar-free BBQ sauce then top each meatloaf with 1/2
tablespoon.
Bake for about 20-25 minutes
