This great Instagram poster, Shred Happens, has such delicious recipes. I’ve made quite a few of them, but he focuses on Mediterranean and Middle Eastern flavors, making me want to make each one!
This zucchini was delicious, but I made the mistake of trying to cook dinner while being on back-to-back Zoom calls. Not a good idea! I didn’t make the feta spread that goes underneath the zucchini and forgot the pistachios and sumac, but it still was very good. I’ll be making this again. Hopefully, I‘ll remember everything next time!
I’m also not sure I like mint. Maybe it’s good! But I left the mint out and made a topping for the roasted zucchini with minced garlic, lemon zest, feta cheese, and parsley. Some chopped basil or dill would be good, too, I think. I forgot to sprinkle the sumac and pistachios!
Try this, and it looks so pretty with the diagonal cuts! I cooked it on the stove and finished it in the air fryer. The oven will work, too, of course! For the protein portion of my meal, I made the pecan-crusted pork chops with cream gravy.
I used the It’s Skinny Pasta rice, which is SO good. It only has two carbs per serving, and it is so much like carby rice. I think it definitely could fool some people. It’s that good!
