This Mexican Beef is so delicious and can used in several different ways. Over cauliflower rice or mashed cauliflower, in taco salad, enchilada, or tacos. I used just one kind of dried pepper. Maybe the Ancho peppers? Whatever the red large dried ones are from the grocery store instead of the other dried pepper. I added a can of chipotle peppers in adobo sauce. This is a great way to cook a chuck roast In the crockpot.
