This is a great recipe by Cast Iron Keto that definitely gives you that delicious feeling of ZMexican Cauliflower Rice.

I changed up this recipe a little based on the ingredients I had on hand so definitely make it your own I used fresh cauliflower also, I usually always think fresh is best, but in this case I think I like frozen cauliflower rice better. The fresh was still delicious though, so if that’s what you hav3 definitely use it I also added the red and orange bell peppers. I love Rotel, but didn’t have an6 so I used som3 tomato paste

I learned very quickly to not overload the food processor and rice the cauliflower in smaller batches. Very messy even doing the smaller batches!
