I used this casserole recipe from Wholesome Yum for inspiration the other night. I’m trying to watch my dairy and fat intake to keep calories a bit lower, so I did eliminate the dairy, but it would be SO good in this! I also cleaned the fridge and added the veggies I had to this.
I like spicy, so I added chopped jalapeños and a can of chipotle peppers, so I chopped one of those peppers and some of the adobo sauce they are packaged in. I was very tempted to sprinkle some cheese, but I stayed strong! It was delicious, even without the dairy!
