The prosciutto makes a great crispy crust for these mini quiche eggs and the mascarpone that’s added to the eggs makes the quiche super creamy. If you don’t have or can’t find mascarpone you may sub cream cheese or ricotta, but try to find it if you can! It has even more milk fat than cream cheese so the eggs turn out super creamy!
