A great dish for any meal!
Nancy looked at several recipes and decided to make this spinach pie from Sugar Free Mom with a few modifications.
Ingredients:
1 teaspoon minced garlic
A small amount of diced onions
2 teaspoon butter
½ teaspoon pepper
¼ teaspoon nutmeg
8 ounces mushrooms
10-ounce frozen spinach
½ cup heavy cream
16 ounces cottage cheese 4%
4 eggs
2 tablespoons grated parmesan
½ cup shredded mozzarella
3 slices of bacon
Sauté a little onion and garlic in butter, and add some nutmeg and pepper into the mix. Then add mushrooms until tender. Next, mix in spinach. Add 1/2 cup heavy cream, cottage cheese, and eggs to the spinach filling.
Place shredded Parmesan into a pie pan for the crust layer, pour in the filling, and then top with shredded mozzarella and some chopped bacon.
Bake at 350 till firm.
