A delicious, easy, make-ahead breakfast!
It makes 1 Dozen; they freeze or keep in the fridge well for several days. We make them
on Sunday to have a quick breakfast during the week.
Servings: 12 Sausage Patties, cooked.
(You don't have to make them well done; they will cook a little more.) We use Johnsonville Sausage, which cooks cleaner with less grease.
Ingredients:
8 large eggs. (You can add more if you need more liquid.)
1/2 cup half and half or cream (You can add more if you need more liquid.)
Green onions, if you like them, I cut up about three and toss them in
Green Pepper or Red/Orange/Yellow Pepper
Mushrooms, canned or fresh
Tiny tomato to the top (Newbies can skip)
You can add other veggies (Spinach or Asparagus is good)
You can add some bacon pieces, too.
1/2 cup Parmesan cheese
1 cup Cheddar cheese
1/2 cup Mozzarella cheese
You can add any cheese. Feta is good. You can add more if needed.
Salt and Pepper to taste
Dash of cayenne pepper
Dash of garlic powder (gives it a buttery flavor)
Dill to taste (goes GOOD with eggs)
Preheat the oven to 350 degrees
Put the sausages in the bottom of the muffin pans. I have two silicone six-muffin pans.
Beat the eggs and half and half and spices
Add the cheeses and veggies and any other ingredients and mix.
Scoop the quiche mixture in each muffin over the sausage patties.
Make sure there is liquid in the cup. If you run out of liquid, add another egg or more half-and-half
Put a tomato on the top if you like.
Bake for 30 minutes. I bake mine a bit longer as I like them a bit more done.
Let them cool
You can store them in the fridge for several days or freeze them.
These are great for a quick breakfast, brunch, or a party. You can make a big
batch of the egg/half and half and spices mix and then add different ingredients if
you want different flavors.
