One Pan Keto Spanish Chorizo & Shrimp

This is another weight loss meal and it is possible to have something very tasty without all the cream and dairy! I loved this. I just used a can of Rotel instead of the canned and cherry tomatoes and it added a little bit of spice to the dish. I served it over spaghetti squash that I had cut in half, drizzled a little olive oil and seasoning salt and pepper, and baked for about 45 minutes at 350 degrees. I couldn’t find Spanish chorizo very easily so I bought it on Amazon. Make sure it’s the Spanish not Mexican chorizo although the Mexican would probably be very good too!
