Oopsie Chaffle Breakfast Sandwich

My Oopsie Breakfast Sandwich! I was making breakfast early this morning and decided to make breakfast chaffle sandwiches. I have a low-carb drawer in the bottom of my fridge with almond and coconut flour, psyllium husk, and that sort of thing.

I had a small almond flour that I reached for to use with the Chaffles. I've gotten to where I don't follow a chaffle recipe. I just put in what I have. I used Mexican blend cheese, eggs, sour cream, seasoning salt and pepper, and what I thought was almond flour. I sprinkled a little Mexican cheese on the mini Dash first, then the batter, and then sprinkled it with a light amount of cheese. This makes it very crispy on the outside and soft on the inside. I did a little test one, and it was SO good! Then, I saw this bag of cornbread mix sitting on the island! I had used the cornbread mix instead of almond flour!


This is THE best cornbread mix! Maybe it's 6 carbs a square, and I usually add chopped jalapenos and cheese to it. Perfect with chili! It's by Good Dees. I use it to make cornbread dressing at Thanksgiving.


So my mistake resulted in a yummy chaffle that would be so good as a piece of bread at dinner, sandwiches, hamburger buns and more! I also put the breakfast sausage in the mini Dash and got cute, crispy waffle sausage! So a little morning breakfast surprise this morning!


Sometimes mistakes are a good thing!
