Peanut Butter Easter Eggs

Shared by DeniseM

The Keto Bunny has to have something to deliver! And it is White Chocolate Peanut Butter Eggs in the Easter Basket!

Denise keto easter eggs made with peanut butter and frosted

It's a long story on these darn things. I almost had to wave the white flag to Reese’s. But I wanted to decorate them, which didn't work.

  • Melt one bag of white chocolate chips with a spoonful of nut butter (I used macadamia nut butter). Melt the chocolate chips for 30 seconds at a time.

  • Next, mix two parts of sugar-free peanut butter (for this, I used peanut butter) with 1 part of Greek yogurt for the egg filling. It makes a very thick paste-type dough. I also added stevia and vanilla to the peanut butter mixture.

Pour the first layer of white chocolate into an egg mold/muffin tin and freeze. Then, put a glob of peanut butter mixture in. Then pour more white chocolate on top and freeze.

I wanted to dye the chocolate and paint that in the mold first, but that didn’t work, so I did

gel food coloring afterward. It looks just OK.

I made more and left them to freeze overnight, and my son Christopher ate six of them when I went to decorate them!

They are quite tasty and you've got to try them! No need to decorate them if you don’t want to. I just used gel food coloring!
