I’ve been noodle-obsessed here lately. I also like to take the Pioneer Woman’s recipes and curb her carby ways and ketofy them! This Peanut Chicken Pasta was very quick and easy to make keto! I just subbed the brown sugar for low-carb brown sugar and used low-carb spaghetti noodles instead of the carby linguine. This just turned out super yummy with all the great Asian flavors! Garnish with peanuts, cilantro, and lime. 🌿.
Here are the low-carb Konjac noodles I used, but any of your favorites will work. Spaghetti works great, as well as Fettuccine and Angel Hair. 😊
