Pesto Eggs

These Pesto Eggs turned out so fantastic! Treat yourself to a different yummy breakfast with these eggs!

Of course, I had to make the latest rage on TikTok! Pesto Eggs! #pestoeggs Oh my heavens

they were SOOO good!


I was going to make a chaffle for them to go on and decided to finally try a piece of

low-carb bread I buy for Christopher. Wow, it is ever so good. I just did one piece at

7 carbs.


So toast the bread, chaffle, cauliflower sandwich thin, bagel, or whatever you want to

use. Spread with ricotta. I didn't have any so I used some cream cheese spread with

bits of onion in it. Then take half of an avocado and mash it then put it on top of the

ricotta/cream cheese spread.


In a skillet put about two tablespoons of pesto. If it has enough oil you won't need the

butter but mine had gotten a little dry. I made it last summer from my garden and I

kept it in the freezer.


Crack two eggs, and cook till the whites are done but the yolks are still runny. Sprinkle with salt and pepper and red pepper flakes.


I served it with some jalapeno cheddar sausage. Full disclaimer, this will be my only

meal today so there are several ways to cut the carbs. Also to make it newbie friendly cut the avocado or use less, use a chaffle or sandwich thin instead of the bread, and have

some bacon with it. I thought the sausage was three carbs, but it's six, and I didn't

notice that until afterward.
