This was pretty yummy, and I didn’t work from an exact recipe, but this is what I did. 🍕
If your chicken breasts are thick enough, you can butterfly them and put everything inside the chicken breasts, but the chicken I had was fairly thin, so I just put everything on top.
Pat dry the chicken breasts and place in a greased casserole dish, as many as you would like
I then used a seasoning of salt and pepper on both sides lightly
I placed about a tablespoon and a half of Rao’s marinara on top
Then sliced provolone went next, enough to completely cover
A layer of pepperoni went on next
Next, I added some sautéed sliced mini peppers and sliced onion in some butter and seasoning, and that went on top of the pepperoni

Then I just put three pepperonis in a row and sprinkled them with Italian seasoning
The breasts I had were thin, so bake at 350 degrees, however long you think. I covered it for about 10 minutes, then removed the foil for another five minutes.
I turned the broiler on and got distracted so the top is possibly a little crispier than I would have preferred, but it still tasted really good!
I served it with Cajun Green Beans with Bacon. These are my son’s favorites!
Also, another favorite of my son’s is Alfredo noodles. I had a jar of Rao’s Alfredo open in the fridge, so I sautéed some garlic in butter and added the sauce, a little heavy cream, and Parmesan cheese. Use whatever quantities you like. I added seasoning, salt, and pepper also and then added the It’s Skinny Pasta spaghetti. That’s so good! Very low carb and low calorie 🍝
