A stir-fry-worthy keto meal. As with many recipes we in the Virta community find online or in our old cookbooks, there are tweaks to be made from the original recipe. And this one from Every Last Bite is no exception: A tantalizing stir fry with pork, eggplant, and a honey-based sauce.
As a substitute for pork, I used steak for this stir-fry. I marinated the steak in olive oil, coconut aminos, garlic, and ginger, and skipped the honey or any sweetener.
After marinating the steak for a few hours, I cooked the steak in my pan (with the marinade) and then removed it and added the stir-fry veggies.
I grilled the eggplant separately. Once cooked, I combined everything and served it over cauliflower rice which was cooked in garlic and butter. I then sprinkled some green onion and cashews on top.
A keto steak and eggplant stir-fry is served!
