Low-carb and Delicious: Making Keto Pierogi from Scratch

I saw the adorable Keto Twins 👩🏻‍🍳👩🏻‍🍳 make this recipe for potato pierogi and they said it was delicious and it just looked so good, so I had to make it! I’m a Texas girl and I don’t think I have ever even had a pierogi! But these turned out so good.

I used the leftover Carnivore Mashed Potatoes, so that saved the carbs from the mashed cauliflower that the Keto Twins used, but mashed cauliflower would work great! I added some heavy cream to the leftover mixture, heated it in the microwave, and then added the two cheeses. Ooooo so good! Tastes just like cheesy mashed potatoes. It was also truly amazing how the melted provolone mimicked the taste and feel of pasta. You do have to time it perfectly though, and it happened very quickly. You want the provolone just melted, but you don’t want it to brown or get too bubbly. Mine had a few bubbles, but not many. I didn’t eat them with any sour cream, but that’s tradition. I thought it would be a bit much! Hope you can make these and enjoy them as much as I did!

I have made some ravioli using this same technique with the provolone! Amazingly like carby pasta ravioli!
