This is my first experience with cottage cheese pancakes. I’ve always been a cream cheese kind of girl. Since cottage cheese is trending everywhere, I decided to try these pumpkin ones for Fall and Halloween. I wonder what happens to you if you eat pumpkin in March?🤷♀️

These pumpkin pancakes were good, I did add a splash of vanilla and now that I’m thinking about it a little sweetener and maybe some melted butter might be good too. They might hold together a bit better with some butter. I thought they were a little crumbly. Not too bad, though, when I finally figured out the proper flipping action. 😊
I used this new keto whipped topping I found at Walmart to make the ghost. It's a fun thing to do, especially for kids! I just put the topping in a plastic baggie and squeezed it out to make the ghost shape, then used Lily’s chocolate chips to make the eyes and mouth. If you have a piping tip, that will work even better. Please don’t do as I did. I made the ghost first and then poured the warmed sugar-free syrup on it (I used Walden’s Pancake Syrup with melted butter). The ghost doesn’t like that and starts to melt! 👻
Here’s the whipped topping that I found at Walmart. Every ingredient isn’t perfect, but just is so handy and as long as it’s just a small amount (1 carb per tablespoon) it shouldn’t be a huge problem. You certainly can use sweetened heavy whipping cream. 😊

This was the carb count I got on Cronometer. So it looks like 26 carbs for the entire recipe of 6 pancakes. I had three pancakes, which would be 13 carbs. 🥞
