This ravioli hack by those very crafty and amazing Keto Twins is just beyond good. You have the taste and feel of pasta dough, like used in ravioli recipes, by taking sliced Provolone cheese and baking it until it just starts to bubble, but doesn’t start to brown. You do not want the cheese to get overdone and crunchy. You want it to still be very pliable and stretchy, like pasta dough. I’ve made different kinds of fillings with this same technique. Also made pierogis with a keto “potato“ filling.
All the ravioli and pierogi recipes are here. This ravioli recipe combines the taste of fall with pumpkin and a brown butter sauce with walnuts and sage. You could use this as an appetizer or a side dish with a meal. It is amazing! you could also fill the provolone ravioli with all sorts of other fillings. Think of some with any other cheeses, ingredients, or spices.
