This is another great recipe using the Fox Hill Kitchens bread Bunz. I like this bread because most manufactured keto bread usually contains wheat, oats, Lupin flours, and other higher carb ingredients, which generally would spike my blood sugar. I haven't noticed that at all with the Fox Hill Kitchens bread. So when I saw this pumpkin bread pudding, I thought I had to try it. In my more carby days, bread pudding was a favorite. Of course, it was! I started using the FHK large Bunz and cut them into 1-inch cubes.
After cubing the Bunz, mix them in your wet ingredients. I added extra of everything. I didn’t think it was sweet enough, so I added more allulose, pumpkin, and spices. I also used straight heavy whipping cream and did not use any milk. I didn’t have any rum, so I substituted brandy. Add the wet ingredients and the cubed bread together and mix well. I let it all soak for about thirty minutes.
After soaking the bread mixture, I poured it into a greased baking pan, added some chopped pecans, covered it with foil, and placed it in the air fryer.
I baked it covered with foil for about 20-25 minutes at 350 degrees in the air fryer and then uncovered it for about 6-8 minutes to toast it on top. (see top photo) Serve with whipped cream; you could make the cream even more special by adding a little alcohol and sweetener of your choice! Enjoy!😊
You can use any of these three product. You would need to make a loaf of bread with the bread mix first and then slice the bread into cubes. 🍞
