I love peanut butter, and I definitely have to be creative in how I incorporate it into my diet. It's packed full of good fats, yet carbs, too, so you need to be accountable for how and when to add it to your meal planning.
This mousse was so quick to make, maybe not as quick as it should have been because I as making other things for lunch on this day. I had set the cream cheese out to be softened, but sometimes that takes forever!
I always worry about presentation—I couldn't quite take a picture that showed the richness of this low-carb dessert. I served these in ramekins, mainly because I didn't feel like breaking out my grandmother's Depression glass dessert glasses. But for a special occasion, this is definitely worth the excavation of your storied dessertware.
A very creamy and sweet tasting dessert, you don't even miss the sugar or the carbs. How about that?
I also threw on some chocolate sprinkles and some low-carb syrup—maybe a drip per serving. I know it was less than 1/8 tsp, but it adds a little bit of tasty liquid, but it is not necessary.
