Rebecca’s Chia Pudding

A healthy yummy pudding!

I've discovered chia pudding. Yum! For variety, I added a tablespoon of cocoa and a stevia packet. Sliced one strawberry and added a sprig of mint. Delightful!


Modified Basic recipe from Carb Manager App:

  1. 1 can coconut milk, 0 carb kind

  2. 3 Tablespoons of Chia Seeds

  3. 1 Tablespoon Vanilla

  4. 2 Tablespoons of granulated Swerve


Mix together in a bowl. Heat in microwave 1 minute, stir, then heat in one minute

increments for a total of 3-4 minutes.


Refrigerate overnight.
