Rebecca’s Keto Tuscan Ravioli Soup

Rebecca posted this recipe in Virta Peeps, but it had the carby tortellini, so it was changed to something more doable, keto ravioli!


Just cut a slice of mozzarella or provolone crossways, to form two triangles and bake at 375 degrees for about 5 minutes or until edges start to turn a little brown.


Then have ready about a cup or two of ricotta cheese, grated Parmesan, salt and pepper, garlic powder to taste, dried basil to taste, and one egg. Work quickly and put a small dollop on each piece of cheese and fold it over to make another triangle.


Put back in the oven for another minute or two and you have keto ravioli!


You can experiment with different fillings like adding sausage, pepperoni, spinach, or kale. You can add them to this yummy soup or just put them on a plate with some marinara or use them to dip with! This soup is so delicious too!
