Rudy’s Keto Lemon Curd Tartlets

Are these Lemon Curd Tartlets not a thing of beauty? Lemon Curd is just so tart and refreshing! Rudy devised a brilliant and easy way to make the Lemon Curd using a VitaMix blender on soup mode. Pour everything in and the blender cooks it gently and you don’t have to stir! But I have made Lemon Curd on top of the stove, so you certainly can do that if you don’t have a VitaMix blender. Rudy's lemon curd

(Please don’t try this in a regular blender). I used the Vitamix shortcut — if you have a blender with the “soup mode” like the Vitamix, you can have delicious lemon curd in less than 5 minutes. The soup mode will emulsify and gently heat the mixture.


Combine three eggs, 1/3 cup lemon juice, 1/2 cup keto sweetener (I use allulose), and a pinch of salt.


Blend in soup mode for 4-5 minutes until thick and creamy. Add one stick of butter cut into a few cubes towards the end, and blend for another minute.


Place them in keto tart shells and topped with whipped cream.

  • 1-1/2 cups almond flour

  • 1/4 cup melted butter

  • 1 TBSP sweetener (swerve or allulose)

  • Pinch of salt


Press into greased tart molds and bake for 10-12 minutes at 350 F.
