I made this salmon bowl in my friend Jean’s honor because she makes them all the time. I don’t know if this is close to hers or not, but it came out very tasty!
I seasoned a salmon fillet and pan-fried it. Afterward, I removed it from the pan and peeled off its skin. In the same pan, I added some chopped garlic and ginger along with some butter and cooked them for about a minute. Then I added some cauliflower rice that I had already microwaved and cooked everything together while adding some more ginger, garlic, and seasoning salt.
I got a big bowl and placed the rice in it. Then I added the salmon on top and mixed it all together, breaking the filet into small pieces. After that, I added a few splashes of coconut aminos (or soy sauce) and mixed it in. Next, I added sliced avocado and cucumber to the mix. Finally, I drizzled sriracha mayo (just sriracha mixed with mayo) on top. Alternatively, you can use Kewpie mayo without sugar.
I also sprinkled Nori Rice Seasoning, but this is optional. Served it with Wasabit-flavored Seaweed Snack chips. This was so good! It tastes like sushi!
