Keto Salmon Coconut Thai Curry

This was very quick and easy, and I made a delicious curry that I served over cauliflower rice. I didn’t have the bok choy and was going to add spinach, so I set it aside and then forgot to add it! I like curry spicy, so I added some curry powder, too. I also like to garnish with Thai basil or regular basil and some chopped peanuts. Very yummy!
