I served these Salmon Patty Sliders with the Bacon and Shrimp Chowder recipe I just posted here on virtaworks. I will admit this is a challenging meal because of the carbs. I usually only eat one meal per day so I have a bit more leeway than someone else who eats two or three meals per day, but I only had one slider, not the two pictured.
I used the AMAZING dinner rolls recipe by Cast Iron Keto. I’ve made these rolls several times, and hands down, this is my favorite keto bread/roll recipe! So good! They remind me of the carby Sister Schubert rolls you can find in the frozen section at the grocery store. I’ve used them for sliders like the Hawaiian rolls you see used so often. I make croutons and they are delicious with some sugarfree jam!😲 You do have to be a little careful with them at 4.9 carbs per roll. But they are made with almond flour and clean ingredients.
It’s a very sticky dough that is best chilled overnight. When rolling the dough into little balls, oil your hands with a little butter. Place the balls close together in whatever type of pan you use so they don’t spread too much.

Then, I added some chopped green onion, mini sweet peppers, and chopped jalapeño to the mini salmon patties. Also, instead of Italian seasoning, I used Cajun seasoning. I formed the small patties and fried them in a small amount of olive oil.
I made mini ones to fit the sliders, but you definitely could make larger ones!😊
Then, to assemble, I split a dinner roll and added a salmon patty, tomato slice, lettuce, and easy tartar sauce made with sugar-free sweet pickle relish and mayo!
Everything turned out super yummy! 🐟
