Keto Shrimp Cauliflower Fried Rice

This is one of my favorite recipes. I make it a lot, but I always add some fresh chopped ginger with the garlic. I also sometimes add some chopped jalapeno or chili flakes for some heat. Any veggies you like can add to this! I usually use frozen cauliflower rice with this and cook it in the microwave for about 15 minutes before adding it to the skillet to brown. I cook cauliflower rice a little longer to make it less crunchy and more rice-like. You want all the liquid to be cooked out. I’ll garnish it with some chopped green onion. 🥡🥢
