I saw a carby version of Shrimp ‘n Grits and thought I needed to make a keto version!
I found two recipes that intrigued me -- and I had to try them both! One from Headbanger's Kitchen was already a keto recipe and the one I had to ketofy was from my favorite Pioneer Woman.
I made Headbanger’s Kitchen shrimp n' grits recipe by following his video. He is this great Indian guy who loves to use the term “Jibber Jabber” a lot! Ha! He has some great recipes on his YouTube channel. I love his Indian food!
The keto grits are riced cauliflower. I used fresh cauliflower, but frozen cauliflower rice could be used and would save some time. If using fresh, pulse the cauliflower to the consistency of grits. Or you could make mashed cauliflower to serve the shrimp, which would be very good, too! I liked this recipe very much and will make it again. It's also great for newbies! 🍤

Tex-Mex Shrimp ‘n Grits
I made a keto-friendly version of the traditional Cajun shrimp ‘n grits. I took this recipe from the Food Network and made some substitutions. Make the recipe as is, but substitute the grits and chicken broth for cauliflower rice. Mashed cauliflower would work, too!
I prepared the cauliflower rice as I have in the past and added all the ingredients from the recipe except a little chicken broth—not the full 5 cups. This was a great dish and I loved the spicy Cajun flavor.
