Shrimp Salad with Tomato and Avocado

This is great served in a tomato or avocado! This is another recipe where all the ingredients can be to your taste, but I just season the shrimp with some blackening or Cajun seasoning, then pan-fried. Let chill. I like a lot of hard-boiled eggs so I’ll put five or six very finely chopped. You can add chopped green pepper, chopped green onion, or celery. I also like a little chopped jalapeño. Then mayo and dill pickle relish. If need be I add a very tiny bit of stevia to make it less tart. Then season with salt and pepper.
