This recipe includes instructions for making cheesy taco shells, which are very good. I made some smaller ones in a mini waffle maker. I added egg whites and Mexican seasonings to the mixture. I also used Fiesta Blend cheese. Cook for 3-4 minutes so they will be crispy. I think they were a little small, but they worked out OK.
I made shrimp and meat tacos. I loved the cilantro lime sauce. I served the tacos with Cheesy Jalapeño Mexican Cauliflower rice. I made that by first sautéing onion, garlic, and chopped jalapeños in butter. Then, I added four bags of Bird’s Eye Spanish Cauliflower Rice and some chicken broth. I cooked that until the cauliflower rice wasn’t as crunchy. Then, I added seasoning salt and pepper. I sprinkled it with Fiesta Blend cheese and cilantro.
