Sicilian meatloaf, also known as "polpettone," is a traditional Italian dish with ground meat, such as beef or pork, mixed with breadcrumbs, eggs, Parmesan cheese, and various seasonings. It is often stuffed with hard-boiled eggs, ham, cheese, and other ingredients, then shaped into a loaf and baked. The result is a flavorful and hearty dish that is perfect for a comforting meal. Sicilian meatloaf is often served with a rich tomato sauce and makes for a delicious and satisfying meal. Some substitutions will need to be made to make this a keto version. For the breadcrumbs, you can use Pork Panko. For the tomato paste, you can substitute it with tomato puree, or if you feel it is a small quantity, go ahead and use it.
