Wow, that’s a long name and a lot to live up to in a small taco! But these turned out super yummy. I did make a couple of mistakes. I used the Mr. Tortilla mini tacos and I think to do this successfully you need a full-size low-carb tortilla. Mama Lupe’s that I get at Target is another low-carb tortilla mentioned in the Virta Resource Center as something that can work. The Mr. Tortilla were so small and were hard to fold and fill. I also used Ground Chuck 80/20 and it shrunk quite a bit, so maybe a leaner hamburger meat would work better? But these were still delicious and I would say about 4 carbs apiece for the mini ones. 🌮
These are not mine, but what they are supposed to look like with a full-size tortilla. You could add some more pickles for garnish. 😊
These are my four mini tacos. Just put the ball of meat on the tortilla and smash it out to the edge. Then put it meat side down in your skillet. Have all your toppings and sauce ready to go. I added some caramelized onion to my sauce.
