Keto Spanish Eggs🍳🌶️

I loved these baked Spanish Eggs with the peppers and chorizo! I followed the recipe pretty much as is, but I subbed the roasted peppers for just some chopped mini-sweet peppers and bell peppers. I also added chopped jalapeño. I didn’t have the Manchego cheese but used Monterrey Jack instead. I used a greased small cast iron skillet, put the chorizo/pepper mixture in the skillet, and created a hole in the middle. Then cracked two eggs in the middle.

and baked it in the air fryer for 3 minutes, added the cheese, and baked it for about 30 more seconds (I wanted the egg whites to be done but the yolk was still runny). Then I garnished it with some parsley. 🍳

I love these cute mini cast iron skillets and serve so many things! On my birthday a couple of years ago I asked everyone just to give me a mini cast iron skillet! They aren’t exactly inexpensive, so ask others to buy them for you! Ha! 😊
