Another recipe using the keto superfood chayote squash! It truly is remarkable all the health benefits that this funny-looking bumpy light green fruit posing as a vegetable brings to keto or overall health journeys. And to make it even better, chayote squash is delicious and can be used in so many recipes!
Here’s my blog on the benefits and some of the recipes I have made so far! So go on a chayote squash hunt! They're not the easiest to find, but my Walmart has them, but they're not the best quality. The best ones can be found at Mexican Markets and are less expensive!
I had only two chayote squash, so I thought this recipe would be good. To stretch the chayote a little, I added some zucchini, but make this as is or add other veggies. If you add other veggies, I recommend cooking the chayote first in the oil (I used a minimal amount of olive oil to make this as low in fat as possible) because it takes longer to cook than most other veggies. I would say about 5-10 minutes, then add the red onion and any other veggies you would like. I also didn’t have the specific chili powder listed in the recipe so I just used smoked paprika.
This turned out super yummy, very healthy, and low in fat, which aids in weight loss, which is one of the many benefits!
