Keto Egg and Sausage Chaffle with Tomato Jam 🍅

I was watching The Kitchen cooking show and they were making a breakfast sandwich with sausage patties, truffle cheese😲, frisée lettuce, AND tomato jam! The tomato jam looked so good, and I thought we could copy this recipe using chaffles, cauliflower sandwich thins, 90-second microwave bread, or those great buns from Fox Hill Kitchens.

Creating Tomato Jam with a Sweetener

I had some tomatoes I needed to use, so I just very quickly chopped them up, put the vinegar, chili pepper flakes, seasoning salt, and pepper, and a couple of heaping tablespoons of a stevia/Erythritol blend sweetener (instead of sugar). I just popped this in the air fryer on the roast setting (375 degrees) for about 40 minutes. I stirred the tomatoes every 15 minutes.


Wow! This was so good and will be great on sandwiches, eggs, hamburgers, chicken, salmon, and just about anything! It would also be great on a charcuterie board with keto crackers and cheese.


To determine the carb count, keep track of how many tomatoes you use and the sweetener, and then take it out of the oven or air fryer, see how many tablespoons you get, and divide that into the number of carbs you had in the beginning ingredients. This is concentrated, so just be careful with how much you use, but what great flavor to add to so much! 🍅

UPDATE: I couldn't stand it and had to try to ketofy this sandwich and use that yummy tomato jam! I decided to use two jalapeño popper chaffles for the bun. They are a great chaffle, but any chaffle you like will work. Here is the link to the recipe on Virtaworks.


The truffle cheese was costly, so I just used smoked Gouda, plus I already had some truffle mayo. It's a little bit of a splurge, but it gives that fantastic truffle flavor to whatever you use it with. You could certainly use plain mayo or no mayo at all.


Then, after I made the chaffles, I decided to cook the sausage patty in the chaffle maker, and it did great! While cooking, I turned the patty over and added a slice of the smoked Gouda to get melty. I removed the sausage and cracked an egg into the mini waffle maker! I didn't close the lid because I wanted the yolk to stay intact. Very daring. I have never cooked an egg in the waffle maker before, and it did work!


So then I assembled everything. Chaffle, truffle Mayo, tomato jam, sausage, Gouda, fried egg, green leaf lettuce (Walmart didn't have the fancy frisée lettuce), and more truffle mayo on the chaffle on top. This was one of the best things I have done in a while!
