These are my son’s favorite, so I make them a lot. I’ve never added baking powder before, but I couldn’t tell much difference. I also didn’t have any fresh spinach, but I had some leftover creamed spinach, so I just used that. I think that might be even better because of the cream cheese added to the spinach. Everything is better with cream cheese! I also sprinkled a little more feta on top.
