A great New Orleans recipe adapted for Keto!

I adapted this Keto Spinach Madeleine from 3 River Road Recipes, a classic Baton Rouge cookbook. A version is also on food.com.


I substituted cream cheese for flour and heavy whipping cream for evaporated milk. I used 1/2 Monterey Jack and 1/2 Swiss because that's what I had on hand.


My Fitness Pal calculates that each serving (which makes 4, and I halved the recipe, so it makes 8 if you make an entire recipe) has 4.6 carbs, 24 fat, and 12 protein. Enjoy!
