I made these thinking I might not like them, but I was pleasantly surprised! They were so good and made a great sandwich wrap! I think also they could be good to use for enchiladas or fajitas.
The recipe is straightforward. Put three eggs, a handful of spinach, and seasonings (I used onion powder, garlic powder, seasoning salt, and fresh ground pepper), then blend. I added a couple of teaspoons of almond flour and a little water to make them more sturdy hopefully. You want the mixture to be very liquid to spread in the skillet quickly. It's kind of like making a thin crepe. That worked great!
I cooked each wrap with a pat of butter. Then I put mayo on the wrap, filled it with sandwich goodies, rolled it up, and cut it on the diagonal. It looks prettier that way!
