Are you craving something sweet with a hint of strawberry goodness? Look no further than these delicious chaffles topped with fresh strawberries and cream frosting! Trust me, you won't be disappointed with these mouth-watering "shortcake" chaffles. Give them a try and let your taste buds thank you later!
I tried a little experiment to make crispy chaffles because I love crispy food! Here's what I did: before pouring the chaffle batter into the waffle maker, I sprinkled a minimal amount of shredded mozzarella cheese first, then added the batter, and finally another minimal amount of mozzarella. The extra mozzarella didn't really add any taste, but it did give the chaffles a nice crispy texture!
I mixed the whipped cream with stevia and a small splash of vanilla!
In a small bowl, add:
Two teaspoons of coconut flour
1/4 teaspoon baking powder
1/8 teaspoon stevia
Stir
In another bowl:
1 egg
1 teaspoon vanilla
1 ounce softened regular cream cheese
Mix and add to dry ingredients and stir well
Pour 1/2 batter. Sprinkle with chopped strawberries. I added three total to the chaffle mixture, Then top with more mozzarella or just close the lid.
Repeat for the second chaffle sprinkle with sweetened chopped strawberries and top with whipped cream.
